Pumpkin Chocolate Chip Muffins

1/2 cup melted butter
2 eggs
1 cup pumpkin
1 Tbsp. pumpkin spice
1 cup sugar
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1 2/3 cup flour
1 cup chocolate chips (I use semi sweet, but you can use milk chocolate also)

Mix together wet ingredients. Combine dry ingredients in a separate bowl. Then fold in the dry combination until wet. Place dough into muffin tins. Cook on 350 for 20-25 minutes.

So-Easy Skillet Frittata

6 Eggs
4 ounces cream cheese spread or 1/2 cup milk
6 slices bacon cooked and crumbled or 6 ounces sausage
1 cup shredded cheese
3 Tbsp cilantro

PREHEAT oven to 400ºF. Beat eggs and cream cheese spread with wire whisk until well blended; set aside. Spray 10-inch ovenproof nonstick skillet with cooking spray. Add peppers to skillet; cook and stir 2 min. or until crisp-tender.

ADD bacon to cream cheese mixture along with 3/4 cup of the shredded cheese and the cilantro; stir until well blended. Add to ingredients in skillet; stir. Cover skillet with lid. Reduce heat to low; cook 6 to 8 min. or until egg mixture is almost set in center. Remove lid. Place skillet in oven.

BAKE 5 min. or until center is set. Remove from oven. Top with remaining 1/4 cup shredded cheese; cover with lid. Let stand 2 min. Loosen frittata from side of skillet with spatula; slide onto serving plate. Cut into wedges to serve.

Munchies

1 cup corn syrup
1 cup sugar
1 cup peanut butter
5 cups Rice Krispies

1 cup chocolate chips
1 cup butterscotch chips

Heat the first three ingredients together, stirring until the sugar dissolves. This can be done in a microwave.
Add the Rice Krispies and spread into a 9x13 pan.

Melt the chocolate & butterscotch chips together and spread on top.

Chapman Family Chocolate Chip Cookies

1 lb butter
1 1/2 cups white sugar
2 cups brown sugar
3 eggs
2 Tbsp vanilla (I use Mexican vanilla)
1 1/2 tsp salt
1 1/2 tsp baking soda
5 1/2 cups flour
1 1/2 cups oatmeal
2 cups chopped nuts (optional)
4 cups chocolate chips, or 2 12 ounce bags

Soften butter. Add sugars and mix together. Add eggs, vanilla, salt and soda. Mix.
Add flour and oatmeal and mix thoroughly. Add the chocolate chips.
Drop by spoonfuls on baking sheet. Bake at 375 for 7-9 minutes. Do not over-cook.

Black Bean Soup

2 cans black beans

1 can chicken broth

1 medium onion chopped

1/8 tsp garlic powder

2 tsp chili powder

1 tsp ground cumin

1/2 tsp crushed red pepper


Mix ingredients and simmer for 30 minutes. To serve, garnish with sour cream, cilantro and a squeeze of lime juice.
